ASPARAGUS WITH SHIITAKE MUSHROOMS
Yield: 450g (1 lb.)
1 lb. 450 gr. Asparagus
6 oz. 175 gr shiitake mushroom
1 Tbsp. 15 mL. Vegetable oil
1 Tbsp. 15 mL. Sesame oil
1 ½ cloves. 8gr garlic chopped
4 fl. oz. 125 mL oyster sauce
TT. Crushed red chillies (optional)
 Wash the asparagus, trim the ends, peel the lower stalks and slice on the bias into 2.5-to
5-cm (1-to 2-in.) pieces.
 Wash the mushrooms, trim of the stems and slice the caps into 1.25-cm (½ in.) slices.
 Heat the oils in a wok or sauté pan.
 Add the mushrooms and asparagus and stir-fry for 1 minute.
 Add the garlic and stir-try for a few seconds. (Garlic will burn fast if heat is to high!!!)
 Add the oyster sauce and crushed red chiles (if using) and continue to stir-fry until the
asparagus is nearly tender, approximately 3 minutes.
